<History
Around 1823, a British Army Major Robert Bruce stumbled upon indigenous tea bushes growing in the Northeast region of Assam, India. Until then, China had provided England with its primarily source of tea and they had no choice but to support China's tea trade monopoly.
With this discovery, the East India Company, one of Englands largest trading companies, seized the opportunity to experiment with growing tea in not only Assam but in Darjeeling, a region in Northeastern India at the foot of the Himalayas. An East India Company employee, Dr. Campbell, first planted Darjeeling tea seeds in his garden at Beechwood, Darjeeling. The planting proved so successful that in 1847 the British government began developing tea estates in the area.
Darjeeling is often called the "champagne of teas" because like champagne, small crops produce an exclusive and limited quantity of premium product. Water
The quality of tea is affected by the quality of water used to prepare it. Using filtered or bottled water is best. If possible, avoid brewing tea with tap, distilled or mineral water. Never over-boil water, as it results in flat-tasting tea.

1) Heat filtered or bottled water to a rolling boil or to 212 F. 2) While the water is heating pour hot water into your teapot and cups, let sit and then drain completely. A warm teapot will maintain the requisite temperature for superior tasting
